Västergötland's region dishes

When we were asked by the West Sweden to create Västergötland's new modern region dishes, we were not slow to say yes.

About the project

As part of Smaka på Västsverige and our close collaboration with local food and drink producers, the task of creating Västergötland's new modern regional dishes became extra fun.

Creating Västergötland's new modern regional dishes was an exciting and educational process about Västergötland's food heritage and history. Rotabagge, matotto and our two protected-of-origin ingredients Vänerlöjrum and Wrångebäck cheese are important components of the three-course menu. Ryttmästarbrännvin with a recipe from the 17th century also belongs to a part of our exciting food and drink history that is included in the dessert.

The drink was created by, among others, sommeliers Johan Falk and Linda Lundemo. It is Anton Schäd who has created the dishes. An extra thank you to Claes Wernersson from Qvänum mat & malt for exciting food history and who laid the foundation for the overall experience.

The new modern region dishes

Starter

Ox carpaccio, Vänerlöj rum and artichoke
A modern "surf'n'turf", a combination between fish, meat and root vegetables

Champagne André Heucq Heritage, Bland de Mineure
A biodynamic family business in Champagne. The drink has a round and vinous character with a taste of minerals with a long and lovely aftertaste.

Main course

Kornotto, rota bug & Wrångebäck cheese
Vegetarian main course, a risotto on barley rice "kornotto", baked pickled rota bug (turnip). Topped with butter and Wrångebäck cheese from Almnäs Bruk.

Homebrew from Qvänum mat & malt
Qvänum mat & malt produces beer and brandy in an artisanal and sustainable way with a focus on local ingredients. The beer is aromatic, fully Swedish and ecologically brewed in Saison style (according to season).

Dessert

Apples, Ryttmästarbrännvin, oats & hay ice cream
Apple, oats and milk from Skaraborg and classic caramel sauce with Ryttmästarbrännvin. The brandy is made at Qvänum mat & malt according to the classic Vastergoth recipe from the 17th century.

Sparkling apple must from Bramleys in Lidköping
The sparkling must has a fruity long aftertaste that is the perfect end to a festive meal.

Taste the dishes

Countryside dishes are not on our menu. The idea is that they will live on and be served at other restaurants and at the governor's residence.
